Souper Saturdays


I love soup. I just don't cook it as much as I'd like because I feel like Mr. Meat and Potatoes expects more of a meal. However, in an effort to be healthier, more budget conscious in these tough economic times, tradition-oriented, etc., I hereby declare Saturday night as Souper Saturday at the Osborn residence. I have the power, right? I figure the rebels won't have a coup right away.

That doesn't mean we won't deviate from the plan, but I'd like to try this for a while (starting next week). So, I'd love you to share some of your favorite soup recipes. The world wide web has bazillions of them to try but hearing your tried and trues would be a lot of fun for me. In fact, the last one I tried from a cookbook was the WORST cooking blunder I'd had in my entire "career." It was AWFUL and definitely not because of anything I did incorrectly.

BTW, Don, if you're reading, don't worry. I'll try to include a salad or sandwich or bread/muffin so you don't starve.

We LOVE soup!!! I was so excited when the weather said some rain today. We are having Sweet Potato Corn Chowder tonight. It is so delish!! And freezes well. I'm actually considering starting a recipe blog. In efforts to make my life more simple in the kitchen organization department. I have printed, cut, written recipes all sitting there waiting for me to figure out how I want them organized. So I think I'll just do a basic blog for myself and that way it organized and accessible to me when I travel home, etc.... Just add them as I do them. Can't wait to hear yours!

I LOVE soup. I will send you some of my favorites later this afternoon. Lia also loves soup and when we go out, she will often finish hers and then granpa's, Nana's and Mama's.

DO you like seafood? I have the best crab corn chowder recipe...and also..another fave is sausage soup...very hearty and much better tasting then it sounds....Don would like it I think!!!

I have a recipe for cheeseburger soup that I got from my father-in-law. He is a terrific cook!! I love soup, especially when it's cold outside. There are some great soup recipes on my recipe blog Kitchen Karma - www.kitchenk.blogspot.com. I don't know if it counts a "soup" but there is a great and easy Chicken and Dumplings recipe on there. Also a Tomato Basil soup that my friend posted. It's to die for. And I don't like tomato soup.

i love soup, too. brody is more like don and prefers chili, but he'll eat soup. great idea for saturdays. one of the best soups i've had was thursday at the ladies fall social. it's joy smith's recipe for zucchini soup and is in the 1999 favorite recipes cookbook.

Once this time of year hits, I love to make soups! I have a couple of old stand by's that I rely on to get us through the cold months!

We love soup! In fact, we have soup Sundays. I enjoy making soup, not only it healthy and economical it makes several meals. I'll send over a few of my favorites this week.

I am not sure I really have any good soup recipes. I will have to look. I will have to peek at the link posted.. I think I need to mooch the souper saturday idea, just cause it will make me smile thinking about you!

I love soup too. I have the best chicken tortilla soup recipe from the Houston Jr. league cookbook...stop and smell the rosemary. When it moves here (the cookbook is in VA) I will e-mail you the recipe.

Haha, your husband is funny! I think that's a great idea! In fact that's what my Mom did growing up...soup and grilled cheese on Saturdays! (I don't think the grilled cheese qualifies for "health conscience" though?!) Maybe a light turkey sandwich?

3 Cheese Potato Soup

This soup is great by itself, but also a nice way to use up leftovers as stir-ins. I love it with bacon and croutons on top!!! ****Not for the calorie conscious, but SOOOOOOO worth it***** :o)

3 Tbsp. butter
1 c. onion, diced
1 tsp. garlic powder
6 - 8 potatoes, peeled and cubed
2 cans cream of chicken or mushroom soup
2 soup cans milk
1 8oz. package cream cheese (light is fine)
1 c. shredded mozzarella
1 c. grated Parmesan or cheddar
Salt and pepper to taste
Melt butter in a large saucepan. Add onions, cooking until soft. Add potatoes and enough water to barely cover. Cook, covered, until potatoes are tender (15 - 20 minutes). In a medium-size bowl, combine soup and milk until smooth. Pour soup mixture into potato mixture and stir over low heat. Add cheeses, and stir until smooth. Heat, but do not boil. Add garlic and salt and pepper to taste.
To Freeze: Allow soup to cool, and ladle into 1 gallon freezer bag. Lay flat to freeze.
To serve: Reheat in microwave or over low heat on the stovetop, stirring constantly to keep from burning. Add in any additional ingredients and heat through.

Try serving it up in a bread bowl. Who cant get full on a whole hunk of bread? :) We love soup around here and there are some yummy recipes for it out there. I bet you will have a convert in no time. Also try some heartier soups- one of our faves is a potato soup and you can add some hunks of ham to it. Very filling and tastey!
