Menu Plan Monday

Yes, we still eat around here.  Yes, I still do a menu.  However, I just haven't been so diligent in sharing.

Here's what's cooking this week:

Monday-Leftovers for Don and Lindy from my birthday dinner.  Don't feel sorry for them.  They'll be having yummy pecan-crusted chicken, garlic mashed potatoes, grilled zucchini, and some grilled pesto chicken flatbread.  Yum!  Meanwhile, I will be dining at Tiago's with my "big sisters."  Here we are last year celebrating in Port Aransas.  Notice the big pile of goodness in front of me!


Tueday-BBQ chicken and cheddar sandwiches.  I thought they sounded yummy and who doesn't love the combo of chicken, bacon, bbq sauce, and cheddar cheese?  I could do without the bun and am not quite sure how I'll eat it yet.  I'll make sure Lindy sets the table with extra napkins!   I think a nice side of mixed berries and some carrots and celery will bring some color and lots of vitamins.

Wednesday-Out before bible study...

Thursday-Pierogies, broccoli, and salad.  If you don't know what a pierogi is, I am not sure I'm totally qualified to tell you.  They are dumplings typically filled with mashed potatoes, onion, and cheese.  They are a staple among Czechs and Polish people, from what I understand.  I was first introduced to pierogies while I was at East Stroudsburg University.  I had a friend whose mom would make her homemade pierogies for her to bring to school; a total labor of love!  They were incredible--especially drenched in butter!  If I'm not mistaken, I can remember having them at the "caf" every once in a while, too.  Anyway, they are wonderful.  I have found a frozen brand that really is very good and the closest thing I'll be getting to homemade.  My body can't handle drenching them in butter like it used to.  Okay, honestly, it really never could handle it!  I pan fry them in minimal (hardly any) olive oil with garlic and they are really quite tasty!

Friday-It is the most wonderful time of the year!!!  Nope.  Not back-to-school.  Nope.  Not Christmas.  It is the $19.95 Party for Two at this restaurant all month--Two soups or salads, one medium SPECIALTY pizza, and a pizookie.  It really is a superb deal for our little family of three, as the pizza alone is usually more than the whole deal.  For $20 we get about six meals (three people eating twice--not three people eating six times) off the pizza.  We order the Mediterranean and have never been disappointed.  The p*izookie is incredible!  We order the Gh*irardelli chocolate variety.  Pure bliss on a plate (and my thighs).  Friday Night Family Pizza night is ON!

Saturday-Grilled chicken with basil lemon pasta and some yet-to-be determined veggie and salad on the side.  Don and I like to cook together but sometimes a lot of the time we get lazy and don't plan for it.  I think it is time for us to be elbow to elbow this Saturday using up some of that basil growing on our back porch.


Sunday-I'm banking on there being some leftovers!


I'm suddenly hungry!  I think my multi-grain Cheeri*s have worn off...

Menu Plan Monday


I remember the good old days when every once in a while I would actually get motivated enough to post my weekly menu. It has been over a year since I've done that. I guess I'm feeling a bit nostalgic, so I thought I'd give it a whirl...

Monday, November 2nd-Chili & cheese turkey dogs on whole wheat buns, butternut squash, and another veggie (which honestly might be corn chips...NO JUDGING please)
Tuesday, November 3rd-Cranberry chicken over rice, green beans, garden salad
Wednesday, November 4th-Out
Thursday, November 5th-Pumpkin baked ziti, broccoli, salad
Friday, November 6th-Leftovers

I also am going to bring this dip with gingersnaps for MOPS on Friday and this salad for a potluck after Ladies Bible Class tomorrow.

I love seeing what other people are having for dinner here.

Menu Plan Monday


It has been AGES since I've posted my weekly menu. To my surprise, I've had people ask me where they've been...I have still faithfully been creating a plan, just not publishing it anywhere beyond the list on the fridge.

Monday, September 8th-Family in different directions...Don's eating at church. Lindy and Lisa are eating leftovers at home.
Tuesday, September 9th-Chicken in Mustard Cream Sauce over whole wheat pasta, asparagus, tossed green salad
Wednesday, September 10th-Quick dinner out before bible study
Thursday, September 11th-Hawaiian Baked Pork Chops, brown rice, broccoli
Friday, September 12th-Don out. Lindy and Lisa eat leftovers.
Saturday, September 13th-Sin-free Shrimp Scampi, angel hair pasta, spinach or there is always the possibility we'll just go out.

I've fallen off the wagon a bit and haven't been as diligent about planning my menus, so I'm going to try to get back on the wagon...
Monday, December 3rd-Chicken marsala, rice, asparagus (Lest you think I'm fancy, I must admit I am cheating. The chicken is a pre-made dinner that I bought from Sam's. Trying to clear the freezer!)
Tuesday, December 4th-Giada's Parmesan-crusted pork chops, broccoli, green salad
Wednesday, December 5th-Out
Thursday, December 6th-Minestrone with Italian sausage, garlic bread
Friday, December 7th-Leftovers

Menu Plan Monday


I didn't post a menu last week because somehow the planets aligned and I didn't have to do any cooking...

However, I am back and here's what is for dinner.

Monday, November 5th-Harvest turkey burgers, fresh fruit, and green tossed salad

Tuesday, November 6th-Spinach Fandango(Making this using low-fat/fat-free products), green tossed salad

Wednesday, November 7th-Out

Thursday, November 8th-Mexican slop...Okay, I know that sounds suspicious. It is ranch style beans, ground beef, cheese, lettuce, tomatoes, olives, on top of tortilla chips. One version of a taco salad. Operative word---E-A-S-Y!!!

Menu Plan Monday


Where did the weekend go??? Somewhere during that brief time I created a menu and started a grocery list to accompany it. Here's what's on the menu this week:

Monday, October 22nd-Leftover grilled sausage for Don and Lindy. Mentoring Moms for Lisa.
Tuesday, October 23rd-Chicken and vegetable stir-fry and rice.
Wednesday, October 24th-Out before church
Thursday, October 25th-Spaghetti Pie (from my new Deceptively Delicious cookbook), salad, spinach
Friday, October 26th-Camping

Last week I made tuna burgers and told you how Don wasn't really looking forward to them. They were simple to prepare and turned out pretty yummy. Both Don and Lindy loved them. Thanks Paula Deen!!!

Menu Plan Monday



Okay folks, it is a Paula Deen kind of week here at my house. Noooo, that doesn't mean two sticks of butter in everything I prep because I do try to minimize the fat where I can. I was paging through Paula's book the Lady & Sons, Too and here's what I came up for this week...

Monday, October 15th-Don has a meeting. Lindy & I are eating leftovers...
Tuesday, October 16th-Tuna burgers, broccoli, tossed green salad
Wednesday, October 17th-Out before church
Thursday, October 18th-Saucy chicken and asparagus bake (this recipe is identical to the one in Paula's book), rice, tossed green salad
Friday, October 19th-Leftovers

Don looked at me with fear and dread in his eyes when he saw tuna burgers on the menu. I'm just trying to branch out, get out of a rut, experiment, and add some Omega 3 Fatty Acids in our diet, too. It is inevitable that there'll be some losers but hopefully not too many...

Menu Plan Monday


Since Don and I have been married I have tried on and off to plan menus and shop ahead for the items. At times I have been successful, at other times I have failed miserably. I adore reading recipes, poring over cookbooks, and watching the Food Network. Yet, when it comes to taking action and making the food I read about come to life, I am not nearly as passionate or diligent.

By far, one of the areas where Don and I spend the most money is eating out. Eating out is often a social outlet for us. We enjoy being with people and since it seems more people get together at restaurants rather than in the home we join the ranks. Other times we do it out of laziness or sheer necessity. Whatever the reason, it can really cut into a budget. When we decide to tighten up and cut back our spending, it is usually in this area and we are amazed how quickly we can add money back into our checking account by planning ahead.

As a stay at home wife and mother, I feel like I should strive to be better in the area of planning meals. Apparently, I am not alone. I came across Laurie's blog at I'm an Organizing Junkie who has decided to share her menus with others. Not only does she plan a weekly menu, she encourages others to plan and includes a cast of many other women's weekly meal plans within her blog.

While I reserve the right to make changes as necessary, here's my first attempt:

Monday, October 1st-Don will be on his own because I am having dinner with friends.
Tuesday, October 2nd-Slow cooker French Dip sandwiches, green salad, sweet potato fries
Wednesday, October 3rd-Out before church
Thursday, October 4th-Gnudi , Caesar salad, garlic bread
Friday, October 5th-Leftovers
